Antioxidant packed bruschetta need not be fiddly - I just throw whatever I like and have on hand together. Today it's fabulous tomatoes, basil and parsley, all from my garden, chopped and mixed with extra virgin olive oil and some fresh Parmesan. Absolutely delicious!If you need a bit of extra protein, add some pine nuts or other chopped nuts or extra cheese. And yes I did butter my sourdough with some butter from a local dairy...... a little indulgence well balanced by the rest of the meal I think!
