This is a great example of a salad with the protein you need added:
- Just use any lettuce or mixed leaves as a base.
- Top that with some protein : a small can of tuna, a few chopped walnuts and some soft cheese – anything will do but marinated goat cheese, chevre (a soft goat cheese), labne (a curd made from yoghurt), ricotta or cottage cheese would work.
- Add tomato and if you have them, some edible flowers for extra antioxidants.
