This is a great example of a salad with the protein you need added:
Just use any lettuce or mixed leaves as a base.
Top that with some protein : a small can of tuna, a few chopped walnuts and some soft cheese – anything will do but marinated goat cheese, chevre (a soft goat cheese), labne (a curd made from yoghurt), ricotta or cottage cheese would work.
Add tomato and if you have them, some edible flowers for extra antioxidants.
